Classic Fried Soft Shell Crab Sandwich

Soft shell crab season is short, and around here, people plan their week around it. When the whalers come in fresh, the whole crab — shell and all — turns crisp and golden in the fryer, leaving nothing to pick apart and nothing wasted. This sandwich is our take on the Chesapeake classic: simple, a little messy, and exactly what soft shell season is for.

Why Soft Shell Crab

Soft shell crabs are blue crabs caught in the brief window right after they molt their old shell, before the new one hardens. That means the entire crab is edible — legs, claws, and all — with a texture that goes crackly-crisp when fried. Availability is tight and seasonal, so when we post that a good batch came in, it moves fast. Ask our team about size and count when you're in; bigger "whalers" make for the best sandwich.

Ingredients

  • 4 soft shell crabs, cleaned (ask your fishmonger to clean them if you're not comfortable doing it yourself)

  • 1 cup buttermilk

  • 1 tsp hot sauce

  • 1 cup all-purpose flour

  • ½ cup cornmeal

  • 1 tsp Old Bay seasoning

  • Kosher salt and black pepper

  • Vegetable oil, for frying

  • 4 brioche buns, toasted

  • Lettuce, sliced tomato, and remoulade or tartar sauce, for serving

Instructions

  1. Marinate the crabs. Whisk the buttermilk and hot sauce together in a shallow dish. Add the cleaned crabs and let them sit for 15–20 minutes — this tenderizes them and helps the coating stick.

  2. Set up the dredge. In a separate shallow dish, combine the flour, cornmeal, Old Bay, salt, and pepper.

  3. Heat the oil. Pour about 1½ inches of vegetable oil into a heavy skillet or Dutch oven and heat to 350°F.

  4. Coat the crabs. Remove each crab from the buttermilk, letting the excess drip off, then dredge thoroughly in the flour mixture, pressing gently so it adheres to every leg and claw.

  5. Fry. Carefully lower the crabs into the hot oil, working in batches if needed. Fry for 3–4 minutes per side, until deep golden brown and crisp. Transfer to a wire rack or paper towels to drain.

  6. Build the sandwich. Spread remoulade or tartar sauce on both sides of the toasted bun. Layer lettuce and tomato, top with a whole fried crab, and close the sandwich.

Serving Suggestions

Keep the sides simple and classic: potato chips, a cup of she-crab soup, or a scoop of our chickpea and quinoa salad if you want something lighter alongside all that fried crab. A cold pilsner or a crisp lager is the traditional move here.
