Grilled Swordfish with Lemon, Garlic & Summer Vegetables
Swordfish is a great choice when you want something hearty from the seafood counter. Its firm, meaty texture holds up beautifully on the grill, while a simple lemon and herb marinade adds plenty of flavor without covering up the fish.

Ingredients
4 swordfish steaks, about 6 ounces each
1/4 cup olive oil
2 cloves garlic, minced
Zest and juice of 1 lemon
1 tablespoon fresh parsley, chopped
1 teaspoon fresh oregano, chopped
Salt and freshly ground black pepper
1 cup cherry tomatoes, halved
1 zucchini, sliced
1 small red onion, sliced
1 tablespoon red wine vinegar
Fresh parsley for serving
Directions
Make the marinade: Combine olive oil, garlic, lemon zest, half of the lemon juice, parsley, oregano, salt, and pepper in a shallow dish.
Marinate the fish: Add the swordfish and turn to coat. Let it sit in the refrigerator for 30 minutes. You don't need much more time. Swordfish has plenty of flavor on its own.
Fire up the grill: Heat your grill to medium-high. Remove the swordfish from the marinade and grill for about 3 to 4 minutes per side, depending on thickness, until nicely marked and cooked through.
Grill the vegetables: Toss the tomatoes, zucchini, and red onion with a little olive oil, salt, and pepper. Grill until lightly charred and tender.
Finish and serve: Toss the vegetables with the remaining lemon juice and red wine vinegar. Serve alongside the swordfish with a little fresh parsley and another squeeze of lemon.
